Motivation and Determinatio


As I mentioned in the past I have been so busy at work. On Sunday and Monday of this week I walked 4 days each week and I made a statement on facebook that I wanted to walk 16 miles by today. Well as the week went on I was unable to get a good workout in at all this week. So today I was on the phone with my BFF Brandi and I told her I was going to walk 8 miles. Well she was with me when I started and completed the first 5 miles which was close to an hour and half of walking.  However by the time I hit mile 5 I was done and did not want to do anymore.  We were still on the phone and she was doing sit ups. Well she challenged me to go back out of my house and walk the last remaining  3 miles. So I agreed that I would walk the 3 miles if she agreed to do 20 more sit-ups. Well guess what I was able to walk 16.5 miles this week. My goal now is walk 5 miles a day when I can. This will be Saturday, Sunday and possibly Mondays.  I am still working on doing a marathon/5k which is looking like it will be in the fall since school is nuts right now

Skinny Bacon Cheeseburger Pie

Lately I have been looking for yummy healthy recipes and this recipes I found  here and  I did modify it some for my liking. All I can say is that we ate this recipes so fast that I could not get pictures. The good thing about this is that you can change it up based on what you like. The original recipe had tomatoes but I don't like cooked tomatoes. So Yummy
 
Ingredients
  •  1lb extra lean ground turkey
  •  1/2 Cup Chopped Onion
  •  1 package reduced fat crescent rolls
  •  1/2 cup Nonfat Cottage Cheese
  • 1 Egg
  • 3/4 Cup Kraft 2% Shredded Cheddar Cheese
  • 4 slices of Bacon
Instructions
  1. Brown Turkey Onion & Garlic in a pan.
  2. Drain meat of fat/grease. .
  3. Place rolls in pie pan (or 8x8 pan) to make crust
  4. Pour meat mixture into pie pan
  5. In a separate bowl, mix cottage cheese with egg.
  6. Pour cottage cheese mixture over meat in the pie pan.
  7. Top with shredded cheddar cheese.
  8. Bake at 350°F for 35-40 minutes – let stand for 5 minutes before serving. I have yet to be able to make the servings actually look like slices of pie.
Servings-8 - 5 points per servings

Weight Watchers- Week 2 of 2013

This past week has been rough!! That is so much of an understatement. I have been dealing with a ton of crap with work. Needless to say I only worked out like 3 times this week which I totally hate. Plus I ate bad. Today I am back on track and went for an hour walk. Hopefully this next week will be better.

Spianch, egg and cheese veggie wrap

Since I work from home and my car there are many mornings that I am  rushing out the door to do visits. Many times I will stop at Starbucks and get me a grande coffee and veggie wrap from them. I am huge fan of Starbucks and while I love it, the prices are crazy. Most days I end my day at starbucks documenting.

As much as I love Starbucks I hate spending the money so the last week I have been looking for east breakfast meals that I can heat up and take with me.

This recipe is based on the spinach, egg white and feta wrap from Starbucks. I did change it up a tiny bit because I was not a huge fan of the feta. This is my take on a veggie wrap from Starbucks

3 eggs whites and 1 egg
1/4 cup spinach, could use more if you like-Zero point food
2tbsp ff cheese, shredded
1tbsp salsa per wrap
3 low fat wraps- the wraps I use are two points each.





Separate the 3 egg yolks from the 3 egg white. Discard the egg yolks. Combine the one full egg with the egg yolks. Add some salt, pepper and any seasoning you like. Mix well, then add the spinach and the cheese, and again mix well. Cook on medium heat until it done to your liking.









In the meantime set up the 3 wraps on cellophane and add half of the 1tbsp of  salsa and spread over the wrap. When the eggs are done, divide into 3 equal parts and top each egg white mixture with the remaining salsa. Fold the wraps and wrap in the cellophane.

I usually stick these in the fridge and use within the week, and reheat int he microwave for 3-45 seconds. However you can freeze them.

Points Plus-4 per serving which is one wrap

Weight Watchers Update- Week 1 of 2013

It is hard to believe that it is 2013. I have been going pretty hard and strong with weight watchers. Even with the holidays I stayed on track with my diet. I did have a few rough patches but I am determined to get this weight off the healthy and right way.

I have been working on getting some issues worked out that involves some eating problems that I have been happening. Thankfully I think I have found a solution and this has been a big help.

My goal for January is to hit 185 by my birthday which is January 30th.

December 31st- 192.7
January 6th-190.3

January Goals!!

Each month of this year I will be doing monthly workout goals!! My january goals are just an extension of Decembers Goals

Miles- still working on walking a hundred miles
Caloires- Trying to burn 3000 caloires
Squats- 1500
Crunches-5000
Jumping Jacks- these are the new ones-1200
Push ups- these are new ones=-1200

Has you can see I have lowered some of these goals and raised some based on last month but also on the fact that school starts back pretty soon

December Goals Update

Hard to believe that we are already on 2013!! I am glad to see 2012 leave!! The last year was a year of growth, pain and lessons. I know that 2013 will be a year of more chnages, more lessons and living every life to the fullest.

Here is a update date on my workout goals for December 2012

I am extremely proud of these goals becasue I really did not think I would accomplish these since I hate squats!!

Here is my weight loss/inches loss update since starting weight watchers in August 2012

These inches loss are defintley a hug thing to see since inches is always a better indication of weight loss. I did not start tracking these until about 2 montha go so definteluy know these are more

Weight Update

So the last week has been an adventure in getting use to working out almost everyday and then also adding in Crunches and Squats. Needless to say I was sore as could be on Monday and I was disappointed because I was up 2 lbs and could not figure out why. However I rebounded and the weight came back off. Today was my official weight loss and I was down 4.4 lbs which brings me 196.2.  I have also been tracking my inches on my waist and hips and both those are down!!

Here is a breakdown of how much weight and inches I have loss since August 19th

Weight- 22.3lbs loss
Hips- 9 inches- this is probably more but did not starting tracking until later
Waist-6 inches
Arms-1 inch
Thighs-3 inches

I hope to see more loss in all the above areas as I incorporate more and more workout activities. I am also hoping to do a bootcamp workout in the month of January.

Decemeber Challenge

On Facebook I follow several weight loss pages. These pages are of people who are on the same journey that I am on. This month one of the ladies posted a squat challenge. Each day you do a certain number of squats and the total for the month is 1640. I decided to practice in that challenge but to change it up some and do crunches. Now I don't have a set number per day but mu goal at the end of the month is 2500. Yes you read that right 2500. I will add a tracker on the side of my blog and update it weekly. Also for December I want to burn 2500 calories. I am aiming for more but really want 2500. I also have been doing a walking challenge where i am trying to reach 100 miles walked. I have been working on this one since November. I will trackers to the side for each goal. Can't wait to see if I can do it all!!

Bacon Pie

I found this yummy recipe here however I had to modify for my weight watchers and also for my kids taste as my youngest is not a fan of cheese(wierd I know). However this recipe came out yummy and I only served this tonight as the main dish but think next time I make chili I will serve this as the bread. My chnages will be in bold,.

12 slices bacon, crisply cooked, crumbled(10 slices)
1 cup shredded Swiss cheese (4 oz) (1/2 cup fat free cheddar)
1/3 cup chopped onion (you can substitute with green onion too) (did not use)
1/2 cup Bisquick
1 cup milk (1 cup fat free half and half)
1/8 teaspoon pepper
2 eggs


Preheat oven to 400 degrees. Grease pie plate, 9x1/1/4 inches.

Sprinkle bacon, cheese, and onion in pie plate.

Stir remaining ingredients until blended. Pour into pie plate.
Bake 35- 40 minutes or until knife inserted in the center comes out clean. Let stand 5 minutes before serving.

The origanl recipe was cooked in a pie pan however mine was cooked in a 8x8 pan. I then cut this into 9 squares.  I had 3 squares which was plently and yummy!!

Weight Watchers Week 11

So as I mentioned earlier this week I was really struggling with my weight. This week I ended up eating alot more caloires and points but I also was working out for at least 30 minutes everyday but Wednesday. I am proud to say that the small changes have helped quite a bit. Go me!!

Total Weight Loss-18.8lbs
Weekly loss-3.3lbs

I am so happy to see that I broke the plaetau and also got down below 200 pounds!! My goal is to keep the health diet, and take whatever loss I get.

Well I have not blogged in a few weeks about my weight becasue I hit a major stall.. When I mean major, I mean major make me want to give up and gorge on food. However, I have not given up and this week I changed up my diet and exercise and hope to see a loss this week. I will start doing my weekly updates again, I just needed to give myself a tiny brake so I could focus on me!

Weight Watchers Week 8

I have finally figured a good system that works for me on my eating and it seems to be the way to keep my weight moving. I am going to florida for a week during the week of Thanksgiving to be with family and before I go I want to be down 25 pounds. That leaves me 28 days to get down 8.9lbs pounds. I would love to see more but if I don't then I will be happy with the 25lbs wieght loss.

Chicken and Wild Rice


Chicken and Wild Rice Soup

1 lb chicken tenders cut into bite size pieces

1 box of Uncle Ben’s wild rice, prepared per box instructions

1 cup celery, chopped

1 cup carrots, chopped

6 cups water

3 chicken bouillons

In a large pot combine the water and bouillon aad bring to a boil, reduce heat, add chicken, celery, and carrots and let simmer about an hour on low heat. Meanwhile prepare the rice as directed and when completed add to the pot and let simmer an additional 10 minutes, serve and enjoy.

 

8 servings=1 cup= 3 pts

Weight Watcher Week 7

After the rought week I had last week, I was determined that I was going to lose the weight that I gained plus more. Well this week was rough due to a Migraine that I got on Sunday and did not break until Friday. I actually ended up calling in sick becasue of the migraine on Friday. I am currently using activty link to track my activity and I am trying to hit a 100% or more every day but the last few days has been rough. This week I am going to try to hit the 100% or more so I can ear more activites.

Crab Salad-6 points per serving


Lately I have been looking for recipes that are higher protein. I have found that the higher protein stuff helps me lose weigth better. This is a recipe I used to make while working in a seafood market years ago. It is one that I could eat everyday. I have tried it with real crab meat but did not like it.
 
Crab Salad

1 pouch of imitation crab meat, broken into chunks

1 orange pepper, cleaned and sliced into strips

½ cucumber seeded and sliced into strips

4tbsp ff Italian dressing

Combine all ingredients into a bowl and let sit overnight so the ingredients have time to mix together

Makes 2 Servings but could make smaller servings

Points- 6 per serving

Bean, Bacon, Carrot Soup


Mt friedn Brandi makes this soup and she is always talking about it so I decided to modify it to my liking and OMG it is great. Defintley will be made several times again.
 
Bean, Bacon and Carrot Soup-crockpot

1 lb of white beans

4 slices of bacon, cooked and diced

2 cups of baby carrots, diced into chunks

6 cups water

2 chicken bouillons

The night before you plan to cook this let the beans sit in the crockpot with enough water to cover the beans. Let soak overnight. In the morning turn on the crockpot for 8 hours on low.  If you want add the carrots in the morning or add about 2 hours before serving.  About an hour before serving add the bacon.  Serve and Enjoy.

Serving size is 8 one cup which is 5 points or 6 1.5 servings for 7 points.

Chicken Salad Recipe- 5points


Since I do alot of my job and school from my car I am always looksing for things that I can take on the run with me.  This salad is super yummy and easy to tranport. I like it on its own but you can try it in a wrap or on a lettuce leaf. Yummy
 
Chicken Salad

1 Large can of chunked cooked chicken, drained and crumbled

2 hardboiled eggs, whites only, chopped

½ cup diced celery

½ cup diced cucumber, remove the seeds

2 tbsp.  light sour cream

2 tbsp.  light mayo.

Combine all and refrigerate for at least 8 hours

The entire salad is 10 points but if you halve the recipes it is 5points for one cup.

Makes 2 cups
